Skara Brae is a stone-built Neolithic settlement, located on the Bay of Skaill on the west coast of Mainland, the largest island in the Orkney Islands and here the secret name for a single cask release of. . well we think it is a 12 year old Highland Park single malt. Aged in an Ex-Bourbon cask that yielded just 450 bottles Natural colour, non chill filtered and bottled at 46% ABV Distilled in June 2005 Nose: Candied peel, tropical fruit, griddled pineapple, vanilla fudge, subtle floral (heather and gorse) peat smoke, garden herbs. Palate: Spicy citrus, white peppery vanilla, smoked heather, candied tropical fruit, touches of aniseed, green fig, gooseberry, wine gums and herbal notes. Finish: Dry and earthy with subtle fragrant smoke, more candied peel, green fruit and lingering white pepper and vanillin oak. If this is Highland Park then great to try a 100% Ex-Bourbon oak aged version.
