Tequila
Tequila has become so popular that 150 Mexican distilleries make over 2000+ brands of tequila mostly in the central western Mexican state of Jalisco. There are many delicious tequilas that can be mixed with fresh lime or citrus juice to make margarita's or the more complex extra anejo's that are best sipped over ice. The 4 main types of tequila are broken down into:
- Blanco (white) or plata (silver) which are bottled and stored soon after distillation and aged less than two months in neutral oak or stainless barrels.
- Reposado (rested) which are aged a minimum of two months but less than a year in oak barrels.
- Anejo (aged or vintage) which are produced in small oak barrels for a minimum of 1 year but less than 3 years.
- and finally Extra Anejo (extra aged) that need to be aged for a minimum of 3 years in oak barrels.
