As its name implies this bubbly is guaranteed to instill feelings of unadulterated bliss in all of those fortunate to taste this fabulous fizz. A deeply satisfying experience from the first sublime sip to the last tantalizing tingle. Once again this wine was blended from the two Cap Classique stalwart building blocks: Chardonnay and Pinot Noir. Whole bunch pressing ensures fractional recovery. After settling of the juice the two varieties are fermented separately. They are then cross-blended along with reserve wine if necessary, bottled and left for 15 months yeast contact time before disgorgement. A special selection of liquer d’expedition was added to produce this delectable demi-sec style of Cap Classique. The perfect bubbly for those who prefer their fizz not too bone dry. Delightfully light yeasty aromas are complemented by hints of butterscotch, honey and praline. This luscious bubbly will stimulate your sweeter senses. Producer Graham Beck’s Robertson estate, Madeba, is situated in the breathtaking Breede River Valley bordering the semi-arid Little Karoo region. The farm is located on the famous Route 62, a meandering country road which takes visitors on an unforgettable tour of the region’s plentiful attractions. At our Robertson Cellar we focus on minimal intervention, allowing instead the authentic essence of the fruit and terroir to shine through in the final wine. With its distinctive hues of peach, green and purple, this unique cellar blends effortlessly into the surrounding Klein Karoo veld, reflecting the beauty of the indigenous fynbos, soils and rocky outcrops of this stark yet spectacular environment. In itself a striking and innovative design, this cellar is responsible for producing our distinctive and world class Cap Classique and still wines. The cellar is divided into three sections. Cellar 1 is dedicated to sparkling wine production, barrel maturation and wine tasting. Cellar 2 is where the grapes are received after harvest and also houses the fermentation and maturation tanks, while Cellar 3 is reserved for bottling, storage and container loading. Guided by our cellarmaster, Pieter “Bubbles” Ferreira, the team adheres to their winemaking mantra: ‘quality is not a destination, it is a journey’. Their mission: the eternal pursuit of the perfect bubble! Recent developments include the addition of a restructured offloading system, which will streamline the harvesting process significantly.
