Vineyard: The estate of Castello d'Albola is situated in the Chianti Classico area in the province of Siena, Tuscany. The vineyards are situated at an average altitude of 500 metres (1,300 feet) above sea level, although at some points they attain a height of 1,640 feet. The soil consists primarily of the alberese and galestro limestone. Vinification and maturation: After removal of the stalks and crushing, the must is fermented for 12 days in contact with the skins in modern horizontal tanks that assure perfect conditions for vinification, allowing for greater skin contact and flavour concentration. Once the sugar has been converted to alcohol, the wine is racked into large Slavonian oak casks, where it matures and fines for 12 months. That is followed by fining in the bottle for a period of six months. Bottling is carried out in anticipation of release onto the market, with provision for the period of fining. Food pairing It is a perfect accompaniment for the richly-flavored dishes of the traditional Chianti cuisine, as well as for grilled meats and mature cheeses.

The wooden wine press, located at the entrance hall of the Zonin’s headquarters in Gambellara, dates back to the beginning of the 19th century. In fact, the construction of wine presses, the way they work, and the system they use for pressing the grapes have essentially remained unchanged since early Roman times.
