Terroir Our Pinot Noir is planted on soil of clay and limestone on the heights of the Aude Valley, at an altitude of 500m, well-exposed to the sun and winds which create a micro climate. Climat The valley has a Mediterranean climate with mountain influences, and experiences drastic fluctuations in temperature between night and day during the maturation period. Vinification After harvest the grapes are sorted and placed in a broad stainless steel vat where they burst under their own weight and the pressure of gravity?s pull. The juice is then left in contact with the skins for 2-3 days while cold maceration takes place in a controlled environment no warmer than 12?C, and the caps are carefully punched down twice every day to ensure maximum extraction between the grape juice and the pulp and skins to ensure the colour and aromas of the final product. The wine is then left to ferment for approximately a fortnight in a controlled temperature of no more than 25?C, after which the vat is drained and the free run wine is separated from the skins and gross lees and half the wine is transferred to oak barrels (10% of which are new), and the other half to stainless steel vats, where it is left on the lees to undergo malolactic fermentation and oak-aging until the next February/March the following year.

The name of the trading refers to a small garden - or Croft - with lily flowers, this plant that winemakers particularly appreciate because it allows them to assess the harvest date, about 100 days after flowering. The lily also symbolizes the aromatic power, like the marketed wines. For its vintages, the domain selects Pays d?Oc wines, mostly from the Haute Vallee de l?Aude, south-west of the Languedoc vineyards and on the threshold of the Pyrenees. This region is particularly dear to the Collovrays & the Terriers because it offers wines that combine freshness and intensity. The Closerie des Lys range consists of the vintages ?Les Fruitieres? in white, red and rose, as well as wines made from the grape varieties ?Chardonnay? and ?Pinot Noir. ?

Food pairing
Serve at either room temperature (15-18?C) or lightly chilled (10-13?C) to accompany meals. Makes an excellent aperitif and goes well with charcuterie and red meat - try grilled lamb and roasted duck.

Since 1997 Domaine Antugnac has been owned and managed by Christian Collovray and Jean-Luc Terrier. These childhood friends grew to become business partners of Domaine Des Deux Roches in the Maconnais. Looking to expand, they focused on Languedoc where land prices were much better than in Burgundy. Antugnac, tucked away in Limoux?s Haute Valle quickly became the clear choice. The domaine is roughly fifty miles west of Carcassonne in a lovely, isolated mountain valley hidden in the Pyrenean foothills, anchored by the old village of Antugnac (whose church was built as a kind of bastide, or fortified building, to protect the villagers from marauding bands in the middle ages). The vineyard parcels start at the village, but the majority climb the heights of the south-facing flanks, growing between 280 and 530 wind-swept meters above sea level in meager limestone soils. The partners quickly understood that this location offered Languedoc?s sunshine tempered strongly by mountain coolness. Limoux is Languedoc?s only cru for white wine because it is the coolest region in Languedoc, and Limoux?s Haute Vallee is the coolest of the cool (the temperature influence is such that the old vine Chardonnay here follows the same vegetative cycle as the partners? Chardonnay in Macon). The partners figured that wine from these mountain vines could achieve sunny ripeness coupled with distinct freshness, and what they tasted confirmed the possibility. What they have come to subsequently make certainly confirms this, and it?s aided in no small part by their attention to detail. Harvest typically begins in the wee hours before dawn and finishes by 11 in the morning, before the hot weather commences. Extractions lean toward the light and short scale. They look for fruit, not power. Beginning in 2002, the partners began planting new, high-density parcels on Antugnacs hillsides. Today, the domaine farms 96 hectares, or nearly 240 acres. The majority is planted in Chardonnay, but thirteen varieties are cultivated. Two primary ranges of wine are made: a base range of remarkably well-priced and lively wines labeled Closerie des Lys (based on grapes from the domaine and augmented by grapes purchased on the negociant market); and the Domaine Antugnac appellation wines.
