A WICKED VERMONT APPLE BRANDY Apple brandy is the original New England spirit. Upon arriving in North America, the traditional sources of starch and sugar for fermentation were hard to come by and the apple proved hardy enough to thrive despite New England winters. Hard cider was consumed as a daily beverage from early colonial times. Seeking a more powerful product, New Englanders “jacked” their cider by allowing the fermented juice to freeze, removing the ice to leave a more concentrated and alcoholic beverage behind. When stills were brought over by other immigrants, the cider was also simply distilled into apple brandy. Because of the relative abundance of apples - and before the triangle trade brought in sugar products - apple brandy or “jack” was the main source of distilled spirits in the colonies. Since Vermont is endowed with apple orchards and they represent part of our Green Mountain heritage, Mad River Distillers sources apples and cider locally, focusing on heirloom varieties to create the essence of Vermont, a salute to our state. We also use the apples from our farm - there are dozens of apple trees dotting the fields surrounding the distillery - a remnant of the Cold Spring Farm history. Our apple brandy is very “fruit forward” - exactly how we had hoped when we sourced the still in Germany. We released our first limited batch of Malvados in October of 2014.

The origins of Mad River Distillers dates back to a dinner Maura and John were having in 2011. Maura was talking about planting a vineyard on their farm and someone suggested that Vermont was an unforgivng climate for grapes and that it would be better to produce something more indigenous like apple brandy. John, who was a life-long fan of Calvados, the French apple brandy, was immediately intrigued. Soon, Brett, who shared John’s appreciation for Calvados, was on board and the idea of starting a distillery at Cold Springs Farm was born. Next on board was Alex, who did an amazing job renovating a dilapidated old horse barn into a state of the art craft distllery. Along the way, Alex also became interested enough to sign on as the General Manager of Mad River Distillers. After finishing the renovations, obtaining our permits and firing up our still, we produced our first spirits, Mad River Rum in May 2013. We have produced over a half dozen different craft spirits since then, including Malvados, our flagship apple brandy.
