This lightly peated whisky is made from malted barley infused with smoke during the drying process. The flavour imparted by the smoke is a reflection of Wolfburn’s history – the original 19th Century distillery was largely fired by peat. Gentle distillation is followed by maturation in our purpose-built warehouses. The result is a beautifully smooth and rounded whisky. Aged in second fill and smaller quarter casks both Ex-Bourbon and lightly peated to around 10ppm. Nose: Chocolate lime sweets, anjelica, white pepper, pine nut, subtle ashy peat smoke, elderflower and green pea. Palate: Spicy lime to start then some menthol/grassy like notes, hints of white pepper, soft peat smoked vanilla, peardrops and apple cores. Finish: Vanilla, chocolate lime sweets, smoky lime curd, elderflower cordial, some green chilli spice/heat. Impressive for such a young single malt, a distillery to watch over the next few years on this evidence.
