This 2 hectare vineyard is located on the upper part of the hill, facing east. This vineyard was owned in the XIIIth century by a Canon of Beaune, Jean Bressand, hence the name ”Bressandes”. It perfectly reflects the evolution of the country through 260 years of existence. Every men and women who proudly beared the colours of Chanson over centuries shared and still share a profound respect for the earth, the vine and the wine.
Food pairing Food pairing : White meat, roast, lamb and all cheeses especially the local cheeses (Epoisses, Citeaux) as well as some goat cheeses.
Producer The Chanson estate produces over a quarter of its own fruit requirements. The other grapes are sourced from growers selected according to their commitment to quality in alignment with Chanson’s quality Charter. Individual plot selection produces fruit which also remains separate through the fermentation and ageing processes. The soil is ploughed to encourage the vines to extend their roots more deeply and therefore better express the typicity of the Terroir. All the grapes are hand-picked at optimum maturity.
