Winemaking Process: Harvesting: Hand-harvested in the cool early morning hours to preserve freshness. Sorting: Rigorous three-tiered sorting process, including cutting-edge optical sorting, to ensure only perfect berries are selected. Fermentation: Cold soaks lasted approximately five days, with fermentations managed by a combination of délestage and pump-overs.
