From Northern Italys Veneto and Friuli-Venezia regions comes a brand new expression of Italys iconic sparkling wine. Vines are planted to well-drained hillside vineyards with rocky, chalky soil that imparts excellent minerality and finesse to the grapes. The grapes are hand-picked and vinified on the same day to preserve their most delicate flavors. After a brief 24 to 36 hour maceration in temperature-controlled tanks on the skins, the Pinot Noir is drawn off and fermented in stainless steel tanks to ensure absolute freshness. The wine sits in autoclave for 20 to 30 days until the perfect bubble structure is attained.
