Grape: Pinot Noir Tasting Notes: Cherry, Plum, Vanilla, Mushroom The Chofflet-Valdenaire estate, located in the Cote Chalonnaise, has been in their family for over 100 years. The 14-hectare Domaine was run by Jean Chofflets son-in-law, Denis Valdenaire since 2000 after working with Jean since 1987. Denis has been dedicated to sustainable farming and gained certification in 2008. In 2017, Jonathan Brunot joined Denis for the harvest. Jonathan took the reins fully in 2018, following Deniss retirement. This Pinot Noir is from 30-year-old vines from the protected middle and upper slopes where the temperatures are highest throughout the day, giving the fruit an extended opportunity to ripen. It is light to medium in body, and beautifully balanced with a silky tannic structure, and bright acidity. The smooth palate features flavors of cherry, plum, raspberry, vanilla, cola, mushroom, forest floor, violet, clove, and light cinnamon and licorice.
