Cultivation. Harvest began October 5, 2023 with manual harvesting in boxes and immediate cooling in cold storage. . Vinification. Fermentation begins with whole-cluster pressing and continues for 2â3 weeks at controlled temperatures using selected yeasts. The wine then matures for seven months on fine lees in stainless steel, gaining texture and complexity. . Tasting Notes. This wine has an appearance of bright straw yellow with golden hues. Its nose is elegant and fresh with pineapple, mint, herbs, and grapefruit. On the palate, it is pleasantly fresh and savory, with bright acidity and a lingering, aromatic finish that highlights its elegance.
