Made with minimal oak and no malo-lactic conversion, this wine is made from fruit harvested in multiple passes through the vineyard. Â Each pass captures the grapes at a different point of ripeness and aromatic expression. Â In combination with vinification in a number of different vessels, stainless steel and oak of varying sizes, additional depth is gained. . Aromas include guava, papaya, Key lime with a stoney mineral edge.
