The Hardin's Creek Distillation Profile Series explores how the structural "proof off the still" alters flavor development when all other variables remain identical. Each expression is aged for 8 years, bottled at 109 proof. . THE CONCEPT. Stripped of the heavier oils by being taken off the still at a much higher proof, this distillate goes into the barrel clean and lean, allowing the wood and fruit esters to dictate the final character. . TASTING NOTES. Drives toward bright orchard fruits, crisp apple or citrus notes, light floral honey, and a cleaner wood spice rather than heavy, dense sugars. . 120 Proof
